Cassia is the bark obtained from certain evergreen trees, of which there are many species. This spice is harvested by peeling the bark from the tree and allowing it to curl as it dries. The strands are sorted, cut and sold by size. We can distinguish the following types of cassia:

  • Cinnamomum loureirii Nees, also known as Vietnamese cassia.
  • Cinnamomum cassia Presl, also known as Chinese cassia. It is said to have a sweeter taste than other varieties.
  • Cinnamomum burmannii Blume, also known as Korintje or Batavian cinnamon. It is grown in Indonesia.
